A Quiet Beginning. A Long-Term Vision.
The Black Squirrel Distillery isn’t a distillery in the traditional sense — not yet, at least.
This is a patient, slow-burning project rooted in appreciation for the craft of whisky-making, and for the people and places behind it. We’re not in a rush. We’re not chasing trends. We’re laying down something meaningful, one cask at a time.
Each year, we fill a small number of carefully chosen casks at distilleries across Scotland — personally, by hand, and with the support of the teams who make it all possible. These casks are then left to mature on-site for 8–10 years, absorbing the character of their environment and the spirit of their origin.

Dunphail Distillery, Inverness, Scotland
So far, we’ve quietly filled seven casks across three Scottish distilleries, and we’re just getting started.
Looking ahead, our ambition stretches far beyond Scotland. We aim to build a truly global cask library — with barrels aging in whisky- and bourbon-producing regions around the world. Each one will tell its own story, shaped by climate, culture, and collaboration.
This is a project built on connection, curiosity, and craft — inspired by the black squirrel itself: elusive, deliberate, and always storing something away for the future.
In time, the bottles will come. For now, it’s about the journey.
